Guest Chef Claudine Elsousou, also known as Mama Pita is an Escoffier-grad chef, boutique caterer, and digital food creator, with a vibrant community of over 17k followers. Specializing in authentic Palestinian cuisine, she's known for her stunning spreads and experience-based dining, bringing the rich culinary traditions of the Middle East straight to your table. Claudine is excited to offer this as a demo & hands-on cooking class, teaching from passion and authenticity. Menu: Welcome Drink, Prepared for You: Limonana- A refreshing mint lemonade, blended fresh and served as you arrive. A little welcome gift to you, cool, vibrant, and the perfect start to our time together. Starter- Hands-On + Demonstration: Moutabal – Together, we’ll create this smoky roasted eggplant dip, blended with tahini, lemon, and garlic, then finished with pomegranate pearls. Claudine show you how to achieve that deep, authentic flavor while you make your own. Main Course- Hands-On + Demonstration: Chicken Musakhan – Two Ways – a demonstration of the traditional village-style open-face pita layered with sumac-spiced chicken, caramelized onions, and olive oil… then Claudine will guide students to create both the classic version and a modern handheld roll, perfect for gatherings and everyday meals. Dessert- Hands-On + Signature Technique: Traditional Knafeh – Togethter, students will make this iconic Palestinian dessert, using authentic Akkawi cheese. Claudine will walk students through her signature stovetop method, using a butter and ghee blend to achieve that perfectly crisp, golden crust with a soft, melty center. This is a viral TikTok favorite, you won't soon forget! Student's will share a full dinner together, recipes to go home. Student's ages 16+ are permitted to register for this class. Students may arrive 10 minutes prior to the start, for apron fitting and hand washing. Cancellation Policy
Students may arrive to class for check in, no earlier than 10 minutes prior to class start time. All cancellations must be e-mailed or called in. 50% booking fee is charged per student on all cancellations from time of booking, up to 10 days before class. Cancellations less than 10 days will not receive a refund. **Class cannot be transferred to another class, please do not ask** This policy applies to all Gift Certificates as well. If you've registered for a class using a Gift Certificate and do not show, the certificate is void. No exceptions.
